
I like my food, oh and wine too! Ask anyone who knows me. I have a preference for simple food though – not haute cuisine.
Here is one of my favourite dishes. Quantities are up to you as I don’t measure anything:
INGREDIENTS:
- Cherry tomatoes
- Kalamata olives
- Capers
- Anchovies to taste
- Garlic
- Chilli (can be fresh cut or chilli flakes – your preference)
- Shallot
- Tomato paste (probably just a squidge if you’re just making this for one or two people)
- Olive oil
- Penne
METHOD:
Start by bringing the water for the penne to boil.
While the penne is cooking put the shallot into hot oil, until it is just starting to become translucent.
Add the olives, capers and anchovies to a) soften the olives and b) dissolve the anchovies
Add the cherry tomatoes, chilli and tomato paste
Once the penne is al dente, drain it and put it into the pan in which you are cooking the sauce and mix together.
Serve with crusty bread and a nice Sangiovese, or wine of your choice.
